Lemon Curd is a cross between a fruit preserve and a lemon pudding. Sort of... I'm not sure if that accurately describes it, because it is neither of those things and is so much better than both. Lemon curd is made with fresh lemons, sugar, eggs and butter. When made properly, you end up with this lemony tart, subtly sweet and oh so creamy jar of goodness. Although it is tempting to dig in with just a spoon, lemon curd traditionally goes into cakes, tarts and virtually any pastry you want to be ... continue reading...

Summer Fruit Cake
This Summer Fruit Cake has it all going on. First off, it's absolutely delicious. An incredibly tender butter cake baked with a beautiful mix of fresh summer fruit. It's fun to get creative and add any combination of fruit that strikes your fancy. The first time I made it, I used blueberries, strawberries and sliced peaches. It was amazing! Third, it is quick and ... continue reading...
Focaccia with Grape Tomatoes
Do you see my photo of the Focaccia with Grape Tomatoes? Yes? After I took the last shot and gave the all clear to my family, the focaccia lasted maybe 10 minutes. They went crazy! This focaccia bread is absolutely delicious and has so much flavor. Sweet tomatoes, sauteed onions and the fruity olive oil offer a wonderful contrast to the fresh rosemary and sea salt sprinkled on top. The focaccia bread itself is soft and airy but still has a satisfying chew to it. As I write this, I'm thinking I'm ... continue reading...
Key Lime Pie
Key Lime Pie may be the perfect dessert. It's light and creamy with a tart citrus flavor balanced by a bit of sweetness. I love this pie when I crave a little something after a good meal but I don't have room for anything heavy. This is the reason that Key Lime Pie is one of the few desserts I'll order at a restaurant. Sometimes I'll order a slice with extra forks and share it with the table. Each bite elicits yummy sounds as we all dig in. Afterwards, as we look longingly at the empty plate ... continue reading...
Pineapple Coconut Cake with Cherries
This recipe for Pineapple Coconut Cake had become a quest of mine about 5 years ago. My husband and I were attending a summer concert festival in Newburyport, Massachusetts. Gorgeous little seaside town that you may want to check out if you are ever in the area. Anyway, it was still morning and we decided to find a place to get a coffee and a little something to tide us over until lunch. Yes, the day is mainly about eating food. Well there was a cute little coffee shop nearby and I ordered ... continue reading...
